The new owners of Caves Saint-Gilles, an institution in the heart of the Marais district, wanted to update this typical Spanish restaurant inspired by a Madrid bodega.

The project consisted in preserving and showcasing the pre-existing Spanish soul of the place, while adding a contemporary and resolutely Parisian touch. Interventions are confined to the total renovation of the bar, the professional kitchen and the upstairs sanitary area.

The shapes and materials used echo the imagery of typical Spanish restaurants: wood, cement tiles, iron railings, ceiling fans, checkerboards on the upper floor. The disparate character of the antique floor and wall tiles is softened by lime plaster. The contemporary touch is reflected in the lighting fixtures, the zinc bar and the furniture.
